Aperitif: Pompelmo Fizz

(= Grapefruit Fizz)

Recommended wine: Torbolino non filtrato

Pompelmo Fizz Ingredients for 4 glasses: 300 ml Torbolino unfiltered, well chilled 5 pink grapefruit 100 ml sparkling mineral water, chilled ice cubes

Cut the grapefruit in half and juice them (set one half aside for decoration). If you prefer your freshly squeezed juice without seeds and filaments, you can strain it. Put 2 or 3 ice cubes in each glass. Pour in the grapefruit juice first, then, slowly, the unfiltered Torbolino, and lastly a drop of sparkling mineral water. Cut slices of grapefruit from the remaining half and use them to decorate each glass

…et voilà, in no time you’ve prepared a fresh, thirst-quenching aperitif with beautiful shades of colour. All that’s left to do is make a toast – cheers… here’s to your health!
