La Vialla’s Méthode Traditionnelle Spumante is made with a selection of the softest Pinot Noirs and Chardonnay – giving olfactory complexity – from the vineyards in the Oltrepò Pavese area. It’s a special “champagne”, not just because it's organic – one of the few in Italy and worldwide – but thanks to its character, which is fresh, “crunchy”, almost saline, unique…. Viallino!
Tasting – Colour: clear straw-yellow. The nose: a mellow floral sensation, with notes of citrus fruits and resin. In the mouth: freshness, good acidity and roundness. Creamy on the palate, lively, with hints of walnut and toasted bread in the finish.
Wine and Food Pairing – Few wines are this versatile, it goes well from simple appetizers to fish risotto and first courses, from oysters and other raw fish to grilled fish and seafood salads.
Ingredients for 4 people: 1 bottle of sparkling white wine 4 balls of lemon sorbet
Put the four balls of sorbet into four flute2 glasses, previously “chilled” in the freezer. Fill them with sparkling wine and serve immediately. Cheers!
