Aperitif: L'aperitivo di Maria

(= Maria’s aperitif)

L'aperitivo di Maria Ingredients for 2 glasses: 1 bottle Spremuta di Pomodoro (freshly squeezed tomato juice) ½ glass of water ½ lemon 2 tsp extra virgin olive oil 2 sprigs of rosemary (or a tender stalk of celery: more classic!) ground chilli pepper salt ice, as required

 

 

 

 

 

 

 

 

A “Viallino” recipe, with an added Tuscan touch.

Mix the freshly squeezed tomato juice with the lemon juice and the water; add a pinch of salt, a pinch of ground chilli pepper and a few ice cubes, then drizzle a couple of teaspoons of extra virgin olive oil on top.

At the Fattoria this aperitif is served decorated with a “double” sprig of rosemary.
